Baby Back Ribs
1 large onion, quartered
2 bunches scallions, ends trimmed, cut into 3-inch lengths
1 Tbsp each salt and black pepper
1 ½ tsp white pepper

racks baby back pork ribs
1 bottle bbq sauce (mesquite)
- Preheat oven to 400 F. In food processor, finely chop onion, scallions, salt, black pepper and white pepper. Rub mixture over ribs. Place ribs, rounded sides up, on rack in roasting pan; cover pan tightly with foil.
- Bake 1 ½ hours, until fork tender; remove from oven. Brush off excess onion mixture from ribs.
- Put ribs in large bowl with ¾ cup bbq sauce; turn to coat. Let stand at room temperature 30 minutes.
- Prepare grill. Grill ribs 7-10 minutes, turning once and brushing with remaining bb sauce, until lightly charred.
NOTE: Serve with corn on the cob, cole slaw and corn bread salad.
