Chicken Gumbo
After assembling all the ingredients, you make the rue:
1 cups vegetable oil
1 cupflour
Stir together in a glass bowl and cook in microwave on high for 5 minutes. Stir, cook again for 30 seconds; repeat until the color of a copper penny or darker. Do not let it get black - this means you have burned the flour. Immediately pour into a large stew pot and add the following ingredients except the file' and the rice. Cover partially and simmer 1-2 hours.
8 cups canned chicken broth
4-6 cans white chicken meat (from Sams - looks like a tuna can)
3 lbsfrozen okra
2 lbsHillshire sausage, sliced in inch slices
32 oz. canned tomatoes, chopped or crushed
2 bell peppers, chopped
4 celery stalks, chopped
4garlic cloves
2bay leaves
2 tsp. dried thyme
2 tsp.dried basil
tsp.Cayenne
4 tsp.salt
2 tsp.ground black pepper
2 tsp.file' powder
cooked rice
45 minutes before serving, prepare the rice. 15 minutes before serving, add the file'. Serve gumbo over rice with crusty sour dough rolls.
NOTE: This recipe is a double recipe. It can be cut in half easily.
