Chicken with Olives and Lemon

1/3 cup olive oil
1 large onion, sliced thinly
1 clove minced garlic
1 T parsely, chopped
1 T fresh cilantro, chopped
½ tsp black pepper
1/8 tsp saffron powder
2 ½ lbs cut-up chicken
1 lemon cut in 8 wedges
½ cup green olives

White rice

Heat oil – stir in next 7 ingredients.  Add chicken and coat with onion mixture.  Top with Lemons.  Cover and simmer for 1½ - 2 hours, turning occasionally.  Transfer to platter.  Over high heat stir remaining liquid till reduced somewhat.  Add olives.  Serve chicken over rice and spoon liquid over chicken.
