Herb Roasted Potatoes Poupon

1/3 c   Grey Poupon mustard
3 T     olive oil
1        clove garlic, chopped
½ t    Italian seasoning
2 lbs   red potatoes, cut in 1 inch pieces

Mix all ingredients except potatoes in a small bowl.  Place potatoes in lightly greased 13x9x2 pan.  Toss with mustard mixture.  Bake at 425°forn 45 minutes to 1 hour, orn until potatoes are fork tender and browning.  Stir occasionally.
