Roasted Cauliflower with Garlic

6 lb cauliflower cut into florets
½ cup olive oil
4-6 garlic cloves, minced
½ tsp salt
¼ tsp black pepper

Preheat oven to 425 F.  Toss cauliflower florets  with oil, garlic, salt and pepper in a large bowl.  Spread evenly in shallow baking pan and roast in upper or lower thirds of oven, stirring occasionally, until golden – approximately 30 minutes.
