Rustic Italian Bread Salad

1        loaf rustic bread, chopped in 1” pieces
5-6     Roma tomatoes, coarsely chopped
1        red onion, coarsely chopped
1-2 c   fresh sweet basil, julienne’d
1        large cucumber, coarsely chopped
1 c     shredded Parmesan cheese

1 c     your favorite Italian dressing (might take more)

Combine all ingredients in a large bowl and toss with dressing.  Allow flavors to develop for at least 10 minutes before serving.  Salad will hold quite a while at room temperature before serving.
