Spicy Pulled Pork

In a 5 quart corck pot, combine:

1       onion, chopped
1 T   Oregano, heaping
2      bay leaves
1 T   Adobo sauce
1       Chipotle chili, diced
1       28 oz can crushed tomatoes
1       14.5 oz can whole tomatoes
2 t    salt
½ t    pepper

2 ¾ lb boneless pork shoulder – trimmed and halved.   Toss pork with other ingredients to coat.

Cover, cook on high until meat is pull-apart tender, about 6 hours.
Transfer to a large bowl and shred with forks, discarding any gristle.

Quesadillas:

1       pckg flour tortillas
1-2 c Monterey Jack cheese, shredded
cilantro

Place flour tortilla on a plate;  sprinkle with ¼ c or so of cheese.  Put in microwave for 30 seconds.  Sprinkle with cilantro – fold tortilla in half – and enjoy!
