Warm Brie Dressing w/ Green Salad

(serves 8-10)

¼ c walnut oil
2 T vegetable oil
1 lb Brie, rind removed
½ c sherry vinegar
1 c heavy cream
½ tsp salt
¼ tsp freshly ground pepper
Greens for salad
1 ¼ c toasted walnuts
2 Granny Smith apples, cut into cubes

For dressing:

  1. Heat oils in large saucepan over medium-low heat.
  2. Cut cheese into 1 inch pieces. Add to pan and whisk until melted. Remove from heat.
  3. Whisk in vinegar, cream, salt and pepper.
  4. Return to heat and cook on low, stirring, until heated through.
  5. Cover and let stand for 2 hours.
  6. Reheat in double boiler over simmering water.
  7. Drizzle over greens, walnuts and apples. Makes 3 cups

NOTE: This can be made ahead of time and reheated just before serving.
